To Understand the dishes you enjoy at Kopici Restauraunt you have to understand the life of
chef/ owner Frank Kopici. Frank was born in Istria region of Croatia on a farm, which borders Italy
(once a part of Yugoslavia). He begged his mother to senf him to the United States so he could leave the stress of communuism and live the "American Dream." At age 16 Frank came to the USA alone, to be told that his mother had passed. Frank with all his sorrow and pride pormised himself one day he will honor his mother with the success in The United States Of America.
Before coming to America Frank was educated on how to cook by his grandmother at a young age. Everything done from scratch and by hand such as baking daily bread for the family, fresh pastas, hearty soups made from vegatables provided from the vegetation of the fields, and even learning how to butcher meat from his grandfather. Frank now at the age of 16 in an unfamiliar country and not understand the English Language did waht most immigrants did, look for work. He landed a jon as most inspiring chefs do as a dishwasher. As time pased Frank Watched and learned techniques from other cooks and advanced his skills and this would have him climb the ladder in the culinary totem pole. From there Frank landed better jobs like becoming a short order cook in very buy diners like the Forum diner in Paramus during the 1970's, than cooking in very popular restauraunts such as Macalusos in Hawthorne, head chef of the Holiday Inn in Saddle Brook and Roberto's Restaurant in Clifton (considered to be one of the best Italian Restauraunts in New Jersey at the time). During the 1990's Frank exploded in the culinary field earning excutive chef in Fairfield, later again reuniting with Masculosos in Hawthorne now crossed over to be a catering house (known to be one of the best catering houses in northern New Jersey.
In November of 2001 Frank with over 30 years of culinary experience ventured out to open his own restrauraunt with his two son's David and James. Frank's oldest son, David runs the front of the house and youngest son James involved in the kitchen helping create special, cooking on the line, and manage the kitchen when frank is not there. Kopici recently celebrated their eighth year anniversary and plant to celebrate many more to come.
